Recipe: Job & Perry’s deluxe kapsalon

Job and Perry, those cheerful guys from 24Kitchen who always have an answer ready (on TV, at least) to the question ‘what are we eating today?‘ – they certainly know what viewers like! An authentic kapsalon: we could really use one of those in these times when comfort food seems to be a basic necessity, because a little reassurance does us all good right now. So if we can’t go to the snack bar (just as we can’t go to the hairdresser right now), the snack bar either comes to us, or we roll up our own sleeves.

Do you know these wise words from food guru Michael Pollan? “Eat anything you want, just make it yourself”. So guys, your recipe has come at just the right time! We previously wrote about the new Indo Food cooking show by the two of them; another cuisine that can offer both longing and comfort. And with this snack hit, for which you can rightly give yourself a pat on the back because you made it yourself, they have hit the nail on the head again. Thanks guys!

How to make Job and Perry’s deluxe kapsalon

  • Heat the oil in a (deep-frying) pan to 150 °C.
  • Preheat the oven to 275 °C (or your oven’s highest setting) with the grill on.
  • Peel and cut the potatoes into fries, then rinse them under the tap to remove excess starch.
  • Pat the fries dry with kitchen paper.
  • Deep-fry the fries for 5 minutes until cooked.
  • Drain and let them cool on kitchen paper.
  • To speed up the cooling process, you can optionally place the fries in the freezer for a few minutes.
  • Meanwhile, cut the chicken thighs into strips.
  • Mix them with the shawarma spices in a bowl.
  • Heat a splash of oil in a frying pan and cook the chicken thigh fillet until done and golden brown, in about 10 minutes.
  • Set aside.
  • Heat the deep fryer to 200 °C.
  • Deep-fry the fries for about 3 minutes until crispy, then drain them on kitchen paper.
  • Season with salt.
  • Finely slice the iceberg lettuce, dice the tomatoes and cucumber, and cut the red onion into thin rings.
  • Place a layer of fries in a container, followed by a layer of chicken thigh fillet strips and then 2 slices of cheese.
  • Bake for about 1 minute under the oven grill until the cheese has melted.
  • Garnish with iceberg lettuce, tomato, cucumber, red onion, garlic sauce and sambal.
