The new cheese fondue pop-up Smelt is opening soon and you can reserve now

Cheese lovers, take note: the popular cheese fondue restaurant Fondue is back. Different name – Smelt – and a different location, but still with top-quality cheeses. Book your table quickly and fight for the religieuse!

Any true cheese lover knows it: the divine cheese shop De Kaaskamer van Amsterdam. This cheese heaven has been located on the Runstraat since time immemorial. And besides selling cheese, there was a cheese fondue pop-up at the end of 2019. Cheese fondue made with top-quality cheeses: that was the mission of De Kaaskamer van Amsterdam when it opened the pop-up restaurant ‘Fondue van de Kaaskamer’.

Top-quality cheese fondue

Cheese fondue is too often made with mediocre cheeses, co-owner Joost Hammann noticed. For more than four months, Fondue served the best cheese fondues in all kinds of varieties at the Westergasterrein. The location and name have changed – even improved, they say themselves – but the mission remains the same: top-quality cheese fondue!

Steaming pot

The new location is Café de Doffer, an Amsterdam institution just like De Kaaskamer van Amsterdam. The two businesses have been across the street from each other for more than a quarter of a century, and this winter they are joining forces. Opposite the shop, next to the café, you can take a seat from 8 December in an authentic yet brand-new restaurant, gathered around a steaming pot.

Mont d’Or Monday

During the first pop-up, Mondays were a huge success thanks to Mont d’Or Monday, when the entire Monday evening was dedicated to the French mountain cheese Mont d’Or. This Monday tradition returns from January.

That final divine bite

Fighting over the religieuse? True cheese lovers immediately know what we mean: that last crispy piece of cheese fondue that sticks to the warm caquelon (fondue pot). In Switzerland, they call it ‘la religieuse’, or ‘the nun’. Traditionally, they crack an egg into the pot to loosen the cheese from the sides. This cheesy scrambled egg is the ‘grande finale’ of the evening.

Five days a week

Fighting over that final divine bite? At Smelt, you can initially visit five days a week (Wednesday through Sunday) to satisfy your cheese cravings. The pop-up has no set end date, but will remain open until at least 1 March 2022.
