Ultimate salad dressing: green goddess

The green fairy is the nickname for absinthe, a creepy drink with so much alcohol that entire generations of artists drank themselves into madness with it. The green goddess is a salad dressing, at least as addictive, but without the urge to cut off your ear. Want to give it a try?

Dressing straight from a bottle onto your lettuce works. But once you’ve tried homemade dressing, there’s no going back (except FavorFlav’s Sharon, because she’s addicted to Kewpie’s Deep Roasted Sesame Dressing). But personally, I think homemade dressing tastes much better. And when that homemade dressing is also this ultimate ‘green goddess’, you’re addicted too. The secret: three different green herbs and one anchovy fillet. We’ve already praised that tiny fish before – and rightly so. It doesn’t make the dressing taste fishy, but it does add umami, which means a major moreishness factor.

How to make green goddess dressing

  • Put all the ingredients in the blender jug and blend until smooth. No blender? You can also use an immersion blender in a cup.
  • Drizzle the dressing over any green salad. But you can also eat it as a dip. Or stir it through pearl couscous for a main-course salad with avocado, pieces of chicken and cucumber.
  • A jar will keep in the refrigerator for at least a week.
