What exactly is okonomiyaki?

Okonomiyaki is a savory Japanese pancake that is very different from the sweet or thin pancakes you’re used to. It is a thick, filling pancake packed with vegetables, meat or seafood, and covered with delicious toppings. There are several types of okonomiyaki, with the Osaka style being the most popular. In this version, all the ingredients are mixed into the batter and cooked together. That’s what you’ll do in this recipe too. Before you start, a tip from Sabine: “Dashi stock is often made from seaweed (kombu). You can buy it ready-made at an Asian supermarket. Instead of dashi stock, you can also use vegetable stock in this recipe.”

How to make the Japanese pancake okonomiyaki

  • Put the flour, dashi, eggs and neutral oil in a bowl and whisk until smooth.
  • Then fold the cabbage, spring onions and bean sprouts into the batter.
  • Use a round baking tin that fits in your Airfryer and pour the okonomiyaki batter into it.
  • Preheat the Airfryer to 180 °C.
  • Cook the okonomiyaki for 8 minutes, until done.
  • Stir all the ingredients for the tonkatsu sauce together.
  • Place the okonomiyaki on a plate and top with stripes of mayonnaise and tonkatsu sauce. Garnish with extra spring onion and bean sprouts.
