This is the secret ingredient for the lightest, crispiest homemade waffles

Warm waffles, eaten straight from the hand, with a crispy edge and an airy texture: count me in. At markets, I simply can’t resist them, because that smell draws me in from afar. And then comes the difficult choice. Strawberries, whipped cream, chocolate sauce, or all of the above? If I want to enjoy this feast more often in my life, I have to make waffles myself. With a secret ingredient that makes them exactly like the ones at the market.

Okay, you may have to put in a little effort to make waffles at home yourself. For one thing, buying a waffle iron is a must. Without such an appliance, you won’t get the grid pattern you expect from a waffle. An investment indeed, such a waffle iron, but hey: you’re genuinely investing in something. And that something is having homemade waffles at home whenever you want!
Like they make them in Brussels
When we think of waffles, our thoughts immediately wander to Belgium. They are champions at making waffles there. Roughly speaking, you can distinguish between two types of Belgian waffles: Brussels and Liège waffles. Liège waffles are somewhat firmer, heavier, and denser, while Brussels waffles are generally a little airier. Do you want those delicious, airy Brussels waffles with a crispy edge? Then add cornstarch to your waffle recipe. This ensures that the inside of the waffle stays soft, while still giving you that wonderful crunch.
You probably already have cornstarch at home, because this wonder ingredient is a hero in so many recipes. And if not: stock up. At the same time as you buy the waffle iron!
Sweet vs. savory
I mentioned strawberries, chocolate, and whipped cream earlier, but of course you can eat waffles in many more ways. And they certainly don’t have to be paired only with sickly sweet ingredients. You’d love to sink your teeth into savory waffles too, wouldn’t you? How about falafel waffles (it even sounds fun), lentil and cheese waffles, or my favorite: waffles with Gruyère and fresh herbs? You can make those waffles however you like, as long as you don’t forget the cornstarch.
