Michelin-star croquette alert! Sergio Herman launches spectacular new croquettes

Sergio Herman’s Frites Atelier has something new on the menu that we’re completely excited about: a selection of restaurant-level croquettes.

We’ve been fans of the crispy fries from Frites Atelier Amsterdam right from the start. That’s because of the truly delicious flavor and texture of the fries, but also because of the special toppings, such as the classic one with Parmesan. This Mediterranean flavor sensation of golden fries, fresh basil mayonnaise and Parmesan grated à la minute with basil cress is truly irre-sist-ible! Sergio Herman recently launched new flavor combinations for his fries, but the good old croquette has also been given a makeover.

The croquette adventure all began with the shrimp croquette, the classic among classics. The Zeeland Shrimp Croquette, as it is officially called, is a restaurant-style croquette; shrimp are not called the ‘caviar of the North Sea’ for nothing, given their exclusivity and exceptional flavor. The shrimp croquette is therefore also on the menu at one of Sergio’s restaurants, AIRrepublic.

After the enormous enthusiasm for the shrimp croquette, Sergio continued creating croquettes. And now there’s also the Slow Cooked Beef Croquette, a
meat croquette made with slowly cooked shoulder cuts in a rich oxtail broth, served with a combination of pepper mayonnaise and a fresh pickle mix.

And the Premium Cheese Croquette has also been added to the range. Sergio’s cheese croquette contains 3 absolute top cheeses: Swiss Gruyère, Italian Parmesan and aged English Cheddar. The full, creamy flavor of this filling cannot be compared with any industrial cheese croquette. This croquette is lightly sprinkled with fresh tomato powder and served with basil mayonnaise.
