Chicken satay obviously couldn’t be missing from our list of 25. One of our favorite chicken satay dishes is this chicken satay pan by Ewald (Hugo Kennis’s stepfather). You let the pan simmer on the stove for a while, allowing the flavors of the marinade and peanut sauce to soak in. The result is a pan you’ll want to lick clean.

His tip: choose a whole chicken with plenty of fat on it and sear it with lots of butter. And use up that red wine you already have open. Coq au vin was originally invented to prevent food waste, after all! Prefer white wine? Then make this coq au Riesling.
